Interview with a Dishwasher

Logan used to resort to a base model “other” brand that was noisy (you could hear the *squish*squish* of the water) and didn’t clean her dishes. It was bad, so bad that Quinn (pictured below in all his furry cuteness), her fur baby, helped out with the dishes. Asko Logan QuinnFast forward to about 6 months ago when Logan was the proud purchaser of a top-of-the-line Asko dishwasher and here is what she has to say from first hand experience…

Logan’s words:

“I put REALLY dirty dishes in there. I even put a casserole dish caked on with a dark berry cobbler and it came out CLEAN!!”

“My wine glasses come out streak free. I usually let them sit for a few days because I don’t have a full load right away.”

“I LOVE the silverware tray. I never use the silverware basket.”

“I don’t hear it. The little display window shows the time left. I also like that the design is simple, doesn’t have a name on the front, and doesn’t compete with other design elements in my kitchen.”

“Quinn likes to sit on the door when the dishwasher is open and sometimes ‘pre-wash’ the dishes. He is 10 lbs.” (It’s a good thing this dishwasher sanitizes the dishes!!!!!)

The top of the line, D5656XXLHS model with a tubular handle has a MSRP of $2155, with the pro handle MSRP at $2210. Their base model starts at $979!!! Inside this stainless steel interior dishwasher sits a fully removal third utensil rack positioned in the center of the dishwasher. The WideClean zones offer more powerful wash action on pots, pans, and cobbler crusted Fiestaware. This model also has an interior light. And since Asko is the dishwasher line for the Subzero and Wolf family, you get a 2 year warranty AND amazing customer service. They also offer a 3 year warranty if it’s purchased and installed by us included as part of a full Subzero-Wolf package. Of course, we have this model and other Askos on the floor. Always Be True To You

TrueVintage1It occurred to me on my latest appliance adventure to Missouri that garages have made a major impact on American history. From music, to computers, to appliances…..they have been an integral part in making magic happen in many industries. After hearing that Bob Trulaske, his father, and his brother went to work on the first roll-top-soda-pop-storing refrigerator in a garage, it made me giggle a little because well….another American garage invention success story.TrueVintage2

So who was Bob Trulaske? He is the founder of True Manufacturing, the world’s leading commercial refrigeration supplier. Founded and made in St. Louis, Missouri, 75% of the raw materials used are sourced from the USA. It’s not a shock that Bob also served in the military and was a World War II Veteran.

While sitting in their local pop shop, Bob and his brother came up with the idea for a refrigerator that wouldn’t need an expensive block of ice. They promised the owner that when they made their first refrigerator it would be his. So in their garage they built the first commercial soda refrigerator. This roll-top caught the attention of 7-Up and Coca-Cola. These companies wanted these refrigerators and True was more than happy to oblige!

Later in the 70s they took a shot at more than just beverage coolers and ventured into the food service industry. People thought they were nuts. What did they know about the food service industry? Considering that the company is in the majority of today’s restaurants, we can see that naysayer hadn’t a clue as to the true capability of True‘s ability to figure it out AND be the best.

Fast forward to 2008 when True decided to take another chance in yet another division they knew nothing about…..the residential market. Again, they were told they were nuts. What did they know about the residential market? Yup. Imagine that? With that in mind I could picture them laughing as they brought to market an uncomparable product line chock full of pieces like a 42″ and 48″ built-in refrigerator with true commercial qualities, under-counter refrigeration, wine preservation, beer dispenser, and an ice machine.

You’re Fired!!!

So for a few months now we’ve had a pretty impressive, counter-top, professional grade broiler on our floor that has our clients asking “What is that thing?” “What do you do with it?” My friends, it’s a BlueStar Salamander and if you are ALL in with your kitchen equipment, this is the piece you’re missing (or maybe not because you already have one?).

Why would you want this broiler? Well, for one it offers super fast results if you want to sear a restaurant-quality steak. If you are looking to finish off your French onion soups or delicately caramelize your crème brulee, toast some amazing garlic bread, or crisp anything for that matter, you can do so in minutes. I’m thinking heating up a slice of leftover pizza might even be fun and crispy in seconds which is how fast you want it out of the refrigerator. It frees up your oven so you don’t have to switch to a broil mid-prep.

Ovens provide “under” fire, while this broiler provides “over” fire, concentrating the heat from above using ceramic infrared heat. With 11,000 BTUs of power, 215 square inches of cooking space, and a max broil temp of 1850 degrees, you can get serious about finishing off meals or making them right in the broiler. It offers three levels so you can use the lowest broil setting positioned furthest from the top to broil delicate things like fish, quickly. I’m just loving the idea of crisping everything. Fast. Super FAST.

Here’s a quick recipe from Bob Luyckx, our Wolf rep, that he created on the fly…for hot, fresh apple cider.

“I used one half of Gala apple and one half envy apple. After cutting each in half I cord them and sliced them into three or four slices lengthwise. Add one bottle of water ( or 2 cups). I added liquid sugar in the raw as a sweetener however you could substitute agave or honey.  I used about a tablespoon and one half, but you can sweeten to taste. Sprinkled some ground cinnamon into the carafe. Put the blender on it’s soup function or mode and in 5 1/2 minutes I had piping hot fresh apple cider at about 140°.”

In The Breeze…

Ventilation serves a great purpose in an active, creative kitchen. Are you the type of cook that takes cooking to another level with smoke, grilling, frying, griddle pans, searing, high heat, and generally put pots of passion into cooking? Is it safe to say on occasion you’re done cooking when your smoke alarms go off? Did you ever try searing a steak on an indoor grill pan only to have the recirculating range hood spit all the smoke back into the house creating a heavenly affect for arriving dinner guests? (Funny story, actually). Then my friend you are in need of quality ventilation.

Vent-A-Hood. Magic Lung. Have you heard of them? Probably not, because their Magic Lung series is so quiet you wouldn’t know they are on. Grease? The centrifugal force spins it right out of the air so it neatly lands into a grease tray that easily snaps on and off to clean.

Smoke? It is easily sucked out of the room without air resistance because they don’t use a baffle filter to catch grease. Noise? Noise is drastically reduced because, again, no baffle filter in their Magic Lung line. At 1200 cfm it only creates 6.6 sones. Heat? The capture area directs the heat directly to the “lung” so it is removed along with the smoke and grease. Clean? The motor is completely encased and therefore never collects grease to gunk it up, slow it down, or ruin it.Fire Safety? This may or may not be something you considered. The way a Vent-A-Hood is designed (without baffle filters that can collect grease), flames aren’t able to escape to a secondary source of combustion. All of this and a full 5 year warranty that covers parts and labor? It’s safe to say that one day I’ll own one and my smoky steak days will be in the breeze…
