Duck, Duck, Chicken…..Goose Eggs !

It is Easter weekend and eggs are everywhere…..plastic eggs, colorful eggs, and boiled eggs.  Parents everywhere will be boiling eggs for their children to dye, decorate and then search for them outside….only for a few to be erroneously found in the heat of the following days.

Recently, one of our owners brought in some fresh duck, goose, and chicken eggs.

We immediately thought we should “boil” them using one of our steam ovens….and we went to the Wolf Convection Steam Oven. When was the last time you changed the way you boiled eggs? New technology in appliances has certainly brought us many shortcuts to spending hours in the kitchen….induction cooktops can cut your boiling time into less than half, speed ovens greatly reduce your baking time, but you can’t perfectly boil your eggs this way without a steam oven.

We actually put the eggs in the steam oven on a cardboard holder, which we don’t recommend….steam created a slightly soggy egg holder, but they cooked perfectly regardless.

The eggs were varied sizes and the oven was set at 210 degrees, then give or take 18 minutes, all the eggs were finished to perfection.  There was no pot of boiling water to watch, trying to guess just how long to leave them on the cooktop….instead, we found the right setting on the display and the oven’s digital technology took away all the guesswork.

Leftovers Get Steamy….

Steam ovens are still one of the relatively newer appliances to hit the market…..our sales staff loves to use them and show them to customers.    There are several misconceptions associated with the steam oven – they look too small, they don’t seem like they would perform multiple functions, and why do I need another cooking  appliance in my kitchen?
A lot of food makes it way through our showroom live kitchens and into the mouths of our staff and customers.   Recently, one of our vendors treated us to lunch and provided  massive amounts of food from Tijuana Flats, we made a good dent but had lots of leftovers.

We fit 8 leftover containers into 2 steam ovens to reheat…..the Bosch and the Jenn-Air. I was a doubter about their ability to hold all the containers, but I was proved wrong.    They were not too small.

We were able to heat large amounts of food in just 2 steam ovens.  One of the great qualities of heating with steam is, you have the advantage of adding moisture back in to your food resulting in leftovers that are not dried out and often taste better the second time around.

This blog is singing the praises of elevating the taste, and saving the life of leftovers by using the wonderful steam oven.  Steam ovens are way more than a means to heat up leftovers…..they will crisp food while maintaining the moisture, they have the space and ability to cook the whole meal from veggies to meats in one appliance, there are pre-set modes to perform multiple functions from defrosting to making perfect boiled eggs  or the flakiest pastry.

Bosch and Jenn-Air both have great Steam Ovens – they have the same steam, convection, and combo steam-convection features.  The Jenn-Air has a slightly slower convection preheat, but the Jenn-Air model is 110 volts and works great in remodels without 240 volt connections.


The misconceptions about steam ovens are wrong….they look small, but hold a lot – they cook everything from a Beef Wellington to simply reheating multiple foods – and as far as concerns over adding an additional appliance in the kitchen, no other appliance can accomplish this much using such a small footprint of space.

Why are grills so expensive?!

If you have ever bought a grill at one of the big box stores, it can make our grills that start about $1000 and up (way up…way, way up) seem kind of pricey. What are you getting with a $3999 DCS, $5769 Wolf or a $12,999 Alfresco that you do not get with a $199 Memorial Day promo grill? BTU’s and longer life are the key benefits.

I was at my sister’s house a few weeks ago. She lives out of state and can’t easily buy appliances from us, so don’t judge her. As the appliance expert of the family, she asked me to look at her grill. Without even walking outside, I told her that her hardware store grill is only good for about two or three years and then maybe you can replace a few parts and get another year out of it. When I looked at it, I was exactly correct. Even though it has stainless steel burners and stainless flame tamers, they do not use the same grade or gauge metal as the premium brands. In her case, the caps over the burners that even out the heat were a pile of rust and the stainless base plate had so much rust that the brackets holding up the drip pan were gone. I was able to wire some things together and get one more season out of her grill.

Our premium brand grills typically have lifetime warranties on most of their stainless steel components. That doesn’t mean you can forget about maintenance. The burners, grates, fireboxes and other heat zone components are built of much thicker gauge material that last much longer. The other big advantage is that our grills are much hotter. If you want to sear a steak the way Ruth’s Chris does, you need a thousand or more degrees. The main burners from our grills are often 25,000 btu’s or higher. Alfresco’s sear zone will hit 1,400 degrees Fahrenheit. At that temperature, you can create a great crust on your steak so quickly that you can keep a great rare zone in the middle.

I don’t want to say that you cannot successfully cook on a less expensive grill; I did for years. Now that I have a great DCS grill, I can say without reservation that my ability to cook great meals has gone up substantially. You Don’t Have to Push My Buttons

Frigidaire Professional series is coming out in the 3rd quarter of this year with their 30″ and 36″ knob controlled induction cooktop. The MSRP is $1949 on the 30″ and $1999 on the 36″ option, which is significantly lower than Viking and Gaggenau, but just a little lower than Big Chill (other brands offering knob controls for a drop-in, built-in induction cooktop).

The 36″ model boasts one 10″ induction element with a min/max wattage of 2500W/3800W, one 8″ induction element of 2300W/3200W, two 7″ of 1800W/2600W, and one 6″ of 1450W/2000W. When using the knob the control knob will allow you to adjust between high and low, as well as increments of .5 between 1.5 and 9. The screen above the knob will display the power level.

TrueVintage1It occurred to me on my latest appliance adventure to Missouri that garages have made a major impact on American history. From music, to computers, to appliances…..they have been an integral part in making magic happen in many industries. After hearing that Bob Trulaske, his father, and his brother went to work on the first roll-top-soda-pop-storing refrigerator in a garage, it made me giggle a little because well….another American garage invention success story.TrueVintage2

So who was Bob Trulaske? He is the founder of True Manufacturing, the world’s leading commercial refrigeration supplier. Founded and made in St. Louis, Missouri, 75% of the raw materials used are sourced from the USA. It’s not a shock that Bob also served in the military and was a World War II Veteran.

While sitting in their local pop shop, Bob and his brother came up with the idea for a refrigerator that wouldn’t need an expensive block of ice. They promised the owner that when they made their first refrigerator it would be his. So in their garage they built the first commercial soda refrigerator. This roll-top caught the attention of 7-Up and Coca-Cola. These companies wanted these refrigerators and True was more than happy to oblige!

Later in the 70s they took a shot at more than just beverage coolers and ventured into the food service industry. People thought they were nuts. What did they know about the food service industry? Is New Technology Great?

Have you ever had part of a song lyric in your head but couldn’t remember the whole song?  Or been in the grocery store and didn’t have the list of ingredients for the recipe you want to make?  Can you live without your smart phone?  With Google in your pocket, we can have a world’s worth of knowledge available anytime.  If you take your phone or tablet with you to the kitchen, you can look up recipes or cooking techniques with ease.   WolfWallOven2

I almost never reference a cookbook anymore.  Pretty soon, you may not even need to power up your phone or tablet to be a better cook.  We now have at least four brands of ovens (click on any of the pictures to go to their sites) with some pre-programmed smart cook functionality and at least four brands that are offering limited wi-fi connectivity to control or check your oven remotely.

I said “at least” because new models are being announced or rumored all the time. If you don’t cook a prime rib regularly, you may forget what temperature to set the meat probe. A smart oven has that built into it.  Just pull up the smart cook function and tell it that you want a medium rare prime rib and the oven does the rest.  Today’s most advanced ovens have settings for beef, pork, poultry, baked goods, and many more foods.

The interface is now easier to use and they have added app controlled Wi-fi connectivity.  I installed the app this morning and without touching the oven, I changed the touch screen image, turned on the oven, and set the timer.  The advantage is that you can start the pre-heat while you are at the grocery store or turn off the oven that you forgot before you left the house.
